Cheesecake Brownies Recipe

Imagine this: silky smooth cheesecake and ooey gooey fudgy brownie combined together in one bite.. when you can’t choose one, why not just have both!


If you’re a cheesecake lover and chocolate fan, then you are absolutely going to fall in love with these decadent swirled cheesecake brownies. They are incredibly quick and easy to make thanks to boxed brownie mix and cream cheese. I’ll link my own brownie recipe here: https://www.eatingwithhouri.com/post/the-best-homemade-brownies, however, to simplify this current recipe, we will be using a box of brownie mix. My go to is the Ghirardelli Triple Chocolate Premium Brownie Mix from Costco.


This is a truly delicious and quite impressive homemade dessert! You’re probably thinking, but how, you’re using boxed brownie mix, yes but I’ve honestly found the best treats are usually simple to make with just a few basic ingredients, and that definitely includes these ooey gooey yummy brownies with a layer of delicious creamy cheesecake topping.


My son didn’t think brownies could get any better, until he tried these! To him, brownies are probably one of the best desserts in the world, but then he saw this concoction, a drizzle of cheesecake over top and he said these are out of this world. Your entire family will beg you to make these over and over again. My kids love them, as do the rest of us. Give my recipe a try, you’re sure to love these too!




INGREDIENTS:


*For the brownie base (see package- it usually instructs you to mix the following ingredients into the brownie powder )

  • brownie mix (about 18 ounces)

  • 1 egg 

  • 1/3 cup of water 

  • 1/3 cup of vegetable oils



Extra ingredients (for the cheesecake topping):


  • 8 ounces cream cheese, softened

  • 1/3 cup granulated sugar

  • 1/2 teaspoon vanilla extract

  • 1 egg




STEPS:



  1. Make the brownie batter as directed in the package and spread it on a 9x9-inch pan. I use a glass one.

  2. Using a hand mixer, beat the cream cheese, sugar, egg and vanilla extract at medium-low speed until it’s smooth.*My hand mixer stopped working, so I used my hand blender, which worked equally well.

  3. Add dollops of cheesecake batter to the brownie batter. Create swirls using a knife.

  4. Bake the brownies according to the package instructions, plus a few minutes longer if needed. The cheesecake is done when the center is set and no longer wet. Insert a toothpick into the brownies to check. * I baked mine for 55 minutes.

  5. Let it set for at least an hour in the fridge before cutting. This step is very (very) difficult for me, in fact, I’ve burnt the roof of my mouth a few times because I just couldn’t resist this delicious treat!
