Baked French Toast Muffins

Say hello to my new favorite breakfast! These quick and delicious French toast bites are not only incredibly tasty, but they are a hit with the whole family- even the pickiest eaters!


You can freeze and reheat them, making them the perfect on the go breakfast for teens too! I mean it’s French toast in muffin shape, what’s not to love?!  


I’ve always loved making a big breakfast on the weekends. It’s just so hectic during the week that we make a point to try to sit down as a family at least one day on the weekend- and having breakfast together seems to be a hit. French toast is always requested by my family, so I decided to simplify the process to maximize our quality time together.


These delicious little breakfast treats  are made in less than 40 minutes from start to finish, and you only need a few staple ingredients. I recommend using thick sliced Texas toast style bread for this recipe. It’s the perfect cut of bread to make these fluffy and soft French toast muffins.


You basically get all the flavors of French toast in a quick and easy muffin! The crispy outside edges and soft & warm insides make it so delicious. Give my recipe a try, you will go crazy for this delicious breakfast idea! 




INGREDIENTS:

  • 10 slices of thick cut bread (I use Texas cut) 

  • 4 eggs

  • 1 cup of milk

  • 4 tablespoons of sugar

  • 1 teaspoon of vanilla extract

  • 1 teaspoon of ground cinnamon



STEPS:

  1. Preheat your oven to 350 F.

  2. Cut the bread into bite size square pieces. Set aside.

  3. Spray or grease a 12 muffin tin with non stick spray.

  4. Mix together the eggs, 2 tablespoons of sugar and the vanilla extract.

  5. Add the bread into the egg mixture and use your hands to get all the bread pieces soaked, it will be messy! 

  6. Add the milk to the bread and gently mix.

  7. In a small bowl add 2 tablespoons of sugar and 1 teaspoon of cinnamon. Mix well.

  8. Spoon half of the wet bread mixture into the 12 muffin cups and sprinkle the sugar cinnamon mixture on top of each, only use half.

  9. Top each “muffin” off with the remaining wet bread mixture and then top with the rest of the cinnamon sugar mixture.

  10. Bake in your preheated oven for 20 minutes. 

  11. Serve with butter, syrup, powdered sugar, or any other of your favorite toppings.
