I’m tapping into my younger year memories to share one of my nostalgic favourites with you. My recipe combines surimi (imitation crab meat), with mayonnaise, seasame oil, lettuce and seaweed that gives you the chance to use all those delicious classic flavours and make it fresh in the comfort of your own home. This is my twist on a few classic salads, incorporating some elements of surimi and kani salads, with my special variations. This recipe is so delicious and the flavours are so well balanced, that you'll want seconds!
You can improvise a lot in this recipe, and you can substitute in other veggies such as julienned carrots, daikon radish, celery, etc. I also like making a spicy version by adding some sriracha to the dressing.

INGREDIENTS:
2 small cucumbers, diced
Romaine lettuce, chopped
A handful of cherry tomatoes, or 1 small tomato, chopped
2 garlic cloves, minced
3-5 kani/surimi crab sticks, shredded (the more the merrier!)
Toasted seaweed to top
Dressing:
3 tablespoons of mayonnaise
1 teaspoon of sesame oil
1/2 teaspoon of white vinegar
Fresh ground pepper to taste
Pinch of salt
STEPS:
Mix the dressing ingredients together in a small bowl.
Mix all the vegetables together.
Add the dressing to the salad and top with seaweed.
Voila! Bon appétit!
