This rice paper danish is one of those recipes that feels bakery-level impressive, yet comes together with the simplest ingredients. The rice paper bakes into delicate, golden layers that crackle when you cut into them, while the goat cheese melts into a creamy, tangy base that balances the natural sweetness of the fruit.
Juicy blueberries and chopped strawberries soften just enough in the oven, releasing their juices and creating a jammy center without any extra sugar. Finished with a drizzle of honey, this danish hits that perfect sweet-savory note; light enough for brunch, but special enough to feel like a treat.

INGREDIENTS (for 1):
3 sheets rice paper
¼ cup egg whites
¼ cup water
¼ cup goat cheese, softened
⅓ cup blueberries
A small handful of strawberries, chopped
Honey, for drizzling
STEPS:
1. Preheat your air fryer to 400°F. In a large plate, whisk together the egg whites and water. Dip each rice paper sheet into the egg mixture, coating both sides well, then stack all three sheets together. This step creates the crisp, flaky base once baked.
2. Place the stacked rice paper onto the air fryer basket liner. Spread the goat cheese evenly in the center, leaving a 1 to 1½ inch border around the edges. Layer the blueberries and chopped strawberries over the cheese.
3. Carefully fold each side of the rice paper toward the center to form a square parcel. Don’t worry if it looks rustic, the folds crisp beautifully.
4. Bake for 12 minutes, or until the rice paper is golden, lightly blistered, and crisp around the edges.
5. Remove from the oven and drizzle with honey while still warm. Let it rest for a minute before serving so the flavors settle and the center stays creamy.
