Zesty Lemon Cookies

If you like lemons, you will love these cookies! These Lemon Cookies are sweet, tart, buttery and bursting with lemon flavour. They are delicious! They add sunshine to those gloomy, rainy spring days. These cookies are very easy to make and the perfect treat for any occasion. I eat them for breakfast, often dipping them in my tea! Give this recipe a try, you’ll love it!


INGREDIENTS:


Cookies:

  • 1 & 3/4 cups of flour

  • 1 teaspoon of baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup of softened butter

  • 1/2 cup of sugar

  • 1 egg

  • 2 tablespoon lemon zest

  • 1 tablespoon lemon juice

  • 2 drops of yellow food coloring


Glaze:

  • 1 cup of powdered sugar

  • 1 tablespoon of soft butter

  • 2 tablespoons of lemon juice


STEPS:


  1. Combine the flour, baking powder, baking soda and salt, in a medium bowl. Set aside.

  2. Beat the butter until smooth and creamy (I use a fork). Then add sugar to the butter, slowly, and mix until combined.

  3. Add the egg, lemon juice, lemon zest, and mix, until well blended .

  4. Slowly add the flour and mix until it’s well combined.

  5. Cover the dough and put it in the fridge for 30 minutes.

  6. Start making the lemon glaze while the dough is resting. - Beat the butter until it’s smooth and creamy.

  7. Add the powdered sugar and continue mixing. Then, add the lemon juice.

  8. Transfer the glaze into a small Ziploc bag and set aside.

  9. Heat the oven to 350 degrees and prepare your baking sheet. I lined my metal baking sheet with a nonstick rubber one.

  10. Remove the dough from the fridge. Add 1/4 cup of sugar to a medium bowl to roll the dough balls in.

  11. Scoop out 1 tablespoon of dough, roll it into a ball and roll into sugar. After that, roll the doll between your hands, making a 4” rope or snake shape. Lay it on your prepared baking sheet, and close the rope, making a circle.

  12. Bake the cookies for 12 minutes.

  13. Remove them from oven and let them cool for 5 minutes. Only add the glaze when the cookies have cooled.

  14. Glaze: Cut a small hole in the corner of the Ziploc bag of glaze. Drizzle each cookie.
