This is the tastiest and easiest avocado toast recipe ever! It’s my go to & I hope it’ll be yours too. If you don’t want to put an egg on it, top it with tuna salad instead, or even a handful of mixed greens, or just alfalfa sprouts and some shallots! It is such a satisfying meal, and the best part..it's healthy!
What’s not to like with these harmonious delicious layers of flavours? Starting with the mashed avocado spread over some delicious crusty whole grain bread, finished with a light drizzle of olive oil, freshly ground black pepper and ground pink sea salt- I’m currently eating one as I write. It's full of healthy, unsaturated fats, packed with fiber and such a simple breakfast, lunch, dinner or snack.

INGREDIENTS:
1/2 small avocado, mashed
1 small cucumber, thinly sliced
5 cherry tomatoes, thinly sliced
1 hard boiled egg, thinly sliced
1/4 teaspoon of sea salt
1/4 teaspoon of freshly ground black pepper
1 slice of whole grain bread, toasted
1 teaspoon of extra-virgin olive oil to drizzle
A little squeeze of fresh lemon juice
STEPS:
In a small bowl, combine avocado, lemon juice, salt, and pepper. Gently mash with the back of a fork.
Top the toasted bread with the mashed avocado mixture.
Add a layer of thinly sliced cucumber. I use my peeler to make them extra thin.
Top with sliced eggs.
The tomatoes are the next layer.
Add a small drizzle of olive oil and salt & pepper.
