Thanksgiving Potato Bites

What do you do when the fridge is full of Thanksgiving leftovers? Turn them into something completely new! These Crispy Air Fryer Thanksgiving Potato Bites are a delicious way to use up leftover mashed potatoes, stuffing and turkey while giving your holiday favourites a fun makeover.

The secret is using leftover mashed potatoes as the base. A little garlic powder adds flavour, while breadcrumbs and cornstarch help bring everything together so you can easily shape the mixture around the filling. Once they’re ready, pop them into the air fryer until they’re golden and crisp. There’s no need for deep frying, making this a simple and convenient way to transform your leftovers.

And let’s talk about the toppings! A generous drizzle of warm gravy takes these potato bites to another level. If you love the combination of savoury and sweet, add a little cranberry sauce on the side. The familiar flavours make these bites taste just like Thanksgiving dinner, with a delicious twist.

Use your favourite shredded cheese or adjust the filling to suit your taste. Just make sure to seal the potato mixture well around the filling before air frying so all that cheesy goodness stays tucked inside. Give my recipe a try!

INGREDIENTS:

  • 2 cups of leftover mashed potatoes

  • 1/2 cup of leftover stuffing

  • 1/2 cup of shredded cooked turkey

  • 1/2 cup of shredded cheese of your choice

  • 2 tablespoons of cornstarch

  • 1 teaspoon of garlic powder

  • 1 egg

  • 1/2 cup of breadcrumbs with 1/2 teaspoon of Italian seasoning

  • 1 tablespoon of gravy, plus extra for serving

  • Salt and pepper, to taste

  • Olive oil cooking spray

  • Cranberry sauce, for serving (optional)

STEPS:

  1. Make the potato mixture. In a large bowl, combine the mashed potatoes, 1 tablespoon of gravy, egg, breadcrumbs, cornstarch, garlic powder, salt and pepper. Mix until everything is well combined and forms a thick mixture that holds its shape.

  2. Prepare your hands. Lightly spray your hands with olive oil cooking spray to help prevent the mixture from sticking.

  3. Fill the balls. Scoop about 2 tablespoons of the mashed potato mixture into your hand and flatten it. Add a little shredded turkey, stuffing and cheese to the centre.

  4. Shape and seal. Carefully bring the potato mixture around the filling, sealing it completely. Gently roll it between your hands to form a ball. Repeat with the remaining ingredients.

  5. Air fry. Place the balls in a single layer in your lined air fryer basket, leaving a little space between each one. Air fry at 400°F for approximately 11 minutes, flipping them halfway through the cooking time.

  6. Serve. Transfer to a serving plate and drizzle with warm gravy. Add a spoonful of cranberry sauce on the side for that classic Thanksgiving flavour combination.

  7. Bon appétit! Enjoy every bite of your Thanksgiving leftovers!
