Taco Flavoured Cheesy Beef & Eggs

Taco Flavoured Cheesy Beef & Eggs is what I'm calling my new concoction! My son is always asking for more protein, and this recipe is perfect for breakfast lunch or dinner! My tecipe is keto friendly and low carb, making it a favorite for our whole family!


My recipe is so simple, yet so tasty. It's so versatile and you can try your own personal spin on it, add any extras you please. I cook the ground beef and add the taco seasoning (following to the instructions on the package) prior to putting the whole dish together. You can make a lot of beef, keep it refrigerated and make small batches of the dish when you want. It's so much easier when you have the meat cooked and ready to use.

INGREDIENTS:


  • 1 pound of lean ground beef

  • 6 eggs

  • 1/2 cup of shredded cheddar cheese

  • 1 tablespoon of butter

  • 1 packet of taco seasoning

  • 1/3 cup of marinara sauce (more to taste)

  • Salt & pepper to taste




STEPS:


  1. Brown the ground beef over medium-high heat, crumbling the beef up into small chunks.

  2. Once completely browned, drain off the excess fat.

  3. Return the meat to heat and add in 3/4 cup of water and the taco seasoning packet. Cook for 3 minutes, stirring the whole time. Set the meat aside.

  4. In a separate pan, melt the butter and cook the eggs on medium heat, stirring the whole time. Add salt & pepper to taste.

  5. Once the eggs are nearly fully cooked, add in the meat. Stir for 1 minute then add in the cheese and sauce. Keep stiring for another minute.

  6. Cook until the eggs are scrambled and no longer runny.  

  7. Bon appétit!
