Roasted Cabbage Wedges with Creamy Herb Sauce

I’ve always believed that the simplest ingredients can surprise you the most. Cabbage isn’t usually the star of the table, but once I tried roasting it this way, everything changed. It comes out beautifully golden, slightly smoky, and so satisfying; proof that you don’t need fancy ingredients to create something memorable.


There’s something so comforting about turning simple vegetables into something beautiful, and these roasted cabbage wedges do exactly that. With just a drizzle of olive oil and a few spices, cabbage transforms into golden, caramelized perfection, crispy on the outside, tender on the inside, and full of flavor.


The smoky paprika and garlic give each wedge a subtle kick, while the creamy herb sauce brings it all together. It’s a blend of tangy sour cream, smooth mayo, a hint of mustard, and a touch of honey for balance. The result? A sauce so good, you’ll want to dip everything in it.


This dish is effortless, nourishing, and surprisingly elegant — perfect for weeknight dinners or as a unique side for guests. Once you try my recipe and enjoy roasted cabbage this way, you’ll never look at it the same again!





INGREDIENTS:


Cabbage:


  • 1 fresh cabbage, sliced into wedges (keep the core intact so it holds together)

  • 3 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper, to taste

  • 1/2 teaspoon of oregano or Italian seasoning

  • Shredded smoke flavoured cheddar cheese for garnish (add to cabbage wedges when hot so the cheese melts)



Sauce:


  • 1/3 cup sour cream

  • 1/3 cup mayonnaise

  • 1 tbsp mustard

  • 1 tbsp fresh parsley, chopped

  • 1 tsp honey

  • Salt & pepper, to taste





STEPS:


  1. Preheat your convection oven to 400°F.

  2. Cut the cabbage in half, then cut each half in half again. Slice each quarter into about 3 wedges, keeping the core so they stay together.

  3. Arrange the cabbage wedges on a silicone baking mat or parchment-lined baking sheet.

  4. Drizzle with olive oil, sprinkle all the seasonings, and rub everything in gently—like giving your cabbage a little massage!

  5. Roast for 15 minutes, then carefully flip the wedges and roast for another 15 minutes, until golden and slightly crispy on the edges.

  6. Meanwhile, whisk together all the sauce ingredients in a small bowl.

  7. Serve the warm cabbage wedges with the creamy herb sauce on the side—or drizzle it right on top.
