Poke Bowl Recipe (my version)

Over the past year, I’ve been seriously craving certain dishes that were my favourites to eat out. I’ve been trying to recreate some of them and it’s been going great! I used to think that I could only get Poke Bowls at a restaurant. Today, I proved myself wrong! I decided that I’d come up with my own version of one of my faves, using the limited ingredients I’d find in my fridge. It turned out so delicious that I had to share my recipe with you! This Poke Bowl Recipe is super easy to make at home, and once try it, you’ll be hooked.


My version of a poke bowl recipe is made with saucy smoked salmon and shrimp, lemon & herb infused basmati rice, crunchy cucumbers and red onions, crispy shredded lettuce and plenty of spicy mayo. It is honestly the perfect combination of sweet, salty, spicy, crunchy, and all things delicious! My Poke Bowl Recipe is totally customizable too. Love ahi tuna? Use that instead. Not into shrimp? Leave it out. Want to add edamame or avocado? Go for it!


INGREDIENTS:


  • seafood of your choice- I used smoked salmon & shrimp

  • 2 tablespoons of soy sauce

  • 2 tablespoons of white vinegar

  • 1 teaspoon of honey

  • 1/4 cup of mayonnaise

  • 1 teaspoon of chilli sauce or sriracha

  • 1 cup of cooked basmati rice

  • 1 cup of shredded lettuce

  • 1 cup of diced cucumber

  • 1/4 cup of finely diced onions (red)


STEPS:


  1. Carefully cut salmon and shrimp (or any seafood of your choice) into small pieces.

  2. Add fish/seafood, soy sauce, vinegar, and honey to a medium bowl. Toss to combine. Let it sit and marinate while you prepare the rest of the ingredients, it’ll soak up the delicious flavours.

  3. Add mayo and chilli/sriracha to a small bowl. Stir well to combine.

  4. Assembly time! Add the shredded lettuce to a bowl. Place the cooked rice on top. Spoon the fish/seafood on top of the rice. Surround the bottom of the bowl with cucumber, all around. Drizzle the spicy mayo over the bowl. Sprinkle with onions and voilà!
