One Pot Quinoa Chili

So..I’m trying to eat healthier, and thought why not incorporate more quinoa in my diet! I threw together some ingredients tonight, all in one pot, and the results were so fabulous that I just had to share my recipe with you! It’s hearty, easy and packed with flavour, you need to give it a try!


INGREDIENTS:


  • 1 medium onion, diced

  • 2 medium tomatoes, diced

  • 5 mini sweet peppers, diced

  • 19 ounces (1 can) of small red beans (drained and rinsed)

  • 1 & 1/2 cups of quinoa

  • 2 teaspoons of garlic powder

  • 1 teaspoon of paprika

  • 1/2 teaspoon of chili

  • 2 teaspoons of salt

  • 1/2 teaspoon of turmeric (secret/not so secret ingredient)



STEPS:


  1. Put all the ingredients into a medium or large pot.

  2. Add 4 & 1/2 cups of water. Bring to a boil.

  3. Lower heat to a simmer, cover and cook for 20 minutes and voilà!

  4. Bon appétit!
