INGREDIENTS:
1 lb extra-lean ground beef
1 lb mini potatoes, cut bite-sized
1 packet taco seasoning
1 tablespoon chili seasoning
1 teaspoon Italian seasoning (or oregano)
1 teaspoon garlic powder
Salt & pepper, to taste
3 tablespoons extra virgin olive oil
1 can Rotel (diced tomatoes with green chilies)
1 cup shredded cheese (cheddar, mozzarella, or a mix)
STEPS:
Heat olive oil in a large pot over medium heat.
Add the potatoes and season with chili seasoning and a dash of salt. Cook for about 6 minutes, stirring often so they brown and absorb the flavor.
Push the potatoes to one side of the pot and add the ground beef. Season with salt and pepper, and cook until browned, breaking it apart with a spoon.
Once the beef is fully cooked, mix it together with the potatoes. Stir in the can of Rotel (with juices) plus 1/4 can of water. Add taco seasoning, Italian seasoning, and garlic powder. Mix well.
Cover and cook for 7 minutes, allowing the potatoes to soften and the flavors to meld.
Sprinkle cheese evenly over the top. Cover and cook for 3 more minutes, until the cheese is melted and gooey.
Uncover, stir everything together, and taste for seasoning.
Serve warm as-is, or top with sour cream for extra creaminess.
