No Bake Chocolate Date Pistachio Bites

Growing up in a Persian home, dates and pistachios were never something special or trendy. They were simply always there. Bowls of dates on the counter, pistachios tucked into cupboards, brought out for guests or eaten quietly with tea. These are flavors that feel like home to me. Comforting, familiar, and deeply rooted in my childhood.
Today was a snow day. The kind that slows everything down and makes the kitchen feel like the safest place to land. With the world outside paused, I decided to play with ingredients I grew up surrounded by and explore something new without pressure or a plan. These no bake bites came together naturally. Simple, rich, and full of meaning.
INGREDIENTS:
Dates
Pistachios
Bakers chocolate
Pistachio spread optional
Skor bits or sprinkles optional
STEPS:
Add the dates and pistachios to a food processor. I use a Magic Bullet. Pulse until the mixture becomes sticky and holds together.
Roll into bite sized balls, pressing firmly so they keep their shape.
Dip each ball into melted chocolate and place on silicone baking mat or parchment paper. Drizzle with pistachio spread if using, then top with sprinkles or crushed pistachios.
Let them set in the fridge and enjoy. A small bite of home on a quiet winter day.
