INGREDIENTS:

  • 6 rice paper sheets

  • 1 cup thick vanilla or Greek yogurt

  • 1 cup fresh fruit, diced (strawberries, mango, kiwi, blueberries, or peaches work well)

  • Optional: drizzle of honey or maple syrup

STEPS:

  1. Fill a shallow dish with warm water.

  2. Dip one rice paper wrapper into the water for 10 seconds, just until softened.

  3. Place the softened rice paper on a clean cutting board or plate.

  4. Spoon about 2 tablespoons of yogurt into the center.

  5. Add a few pieces of fruit on top of the yogurt.

  6. Fold the rice paper around the filling, creating a small pouch or parcel.

  7. Repeat with the remaining ingredients.

  8. Place in the freezer for about an hour.

  9. Bon appétit! Enjoy!

Some friendly advice:

  • Use thick yogurt to prevent excess moisture.

  • These are best enjoyed the same day they’re made.

  • Try different fruit combinations to create your own favourite flavour.

These mochi-inspired bites are creamy, fruity, chewy, and surprisingly satisfying. The combination of soft rice paper and cool yogurt creates a unique texture that’s somewhere between mochi, a fruit wrap, and a frozen yogurt treat. They’re simple enough for a weekday snack but pretty enough to serve at a summer gathering.
