Here is my take on a mango salad! This is a deliciously bright and fresh salad, with a zesty lemon vinaigrette. I like to eat it on its own as a light meal, but it can easily be enjoyed as a side dish too.
I noticed my mangos getting ripe a bit too fast so I decided to throw together a few ingredients and see what happens. The results did not disappoint, this salad is delicious!
I love the different textures and flavors in this dish. The mango is sweet, sour, and slippery, Some people even call the texture of mangos creamy. The cucumbers give it a nice crunch. The strawberries add some more sweetness. The tomatoes bring that pop in your mouth texture. The zesty lemon chilli garlic dressing ties the whole thing together. You can add fresh herbs too, basil or mint work great.

INGREDIENTS:
1 large ripe mango, peeled and thinly sliced into strips (I use my peeler)
1 Persian cucumber, sliced into thin strips (English cucumbers would be too big)
5-7 cherry tomatoes, thinly sliced
5-7 strawberries, thinly sliced
INGREDIENTS (for the dressing):
2 tablespoons fresh lemon juice
1 teaspoon of extra virgin olive oil
1 teaspoon of pomegranate molasses
a pinch or sugar
a pinch of salt
1/8 teaspoon of black pepper
1/2 teaspoon of chilli garlic sauce
STEPS:
In a medium sized bowl, toss together the slices of mango, cucumber, tomato, and strawberry.
Make the dressing in a small bowl by whisking together the lemon juice, olive oil, pomegranate molasses, sugar, chilli garlic sauce, salt and pepper.
Pour the dressing over the mango salad and toss well. Enjoy it immediately.
