Layered Taco Crunch Casserole

Some recipes are fussy… this one is absolutely not.
This is the kind of quick, comforting dinner you throw together when you want something delicious without overthinking it. It’s cheesy, it’s saucy, it’s crunchy on top, and it disappears fast, which is basically the only review my family ever give, and honestly, I’ll take it.
What I love most is how simple it is. A little taco seasoning, a little cream cheese magic at the bottom, and suddenly you’ve got a dish that tastes like taco night and comfort food decided to team up. It’s also incredibly flexible: salsa or marinara, cheddar or mozzarella, whatever’s in your fridge usually works.
It’s the kind of bake that makes everyone wander into the kitchen asking, “What smells so good?” before it’s even out of the oven. It’s cheesy, comforting, and messy in the best possible way, like the food you grew up loving, but just a little elevated. It’s weeknight-friendly, potluck-approved, and a guaranteed crowd-pleaser. Plus, it reheats beautifully, if it even lasts that long! Give my recipe a try, you’ll love it!
INGREDIENTS:
1 pound of lean ground beef
1 packet of taco seasoning
1 cup of softened cream cheese
2 cups of shredded cheese (I use cheddar, mozzarella & havarti)
1 cup of cherry tomatoes, halved
1 cup of chunky marinara sauce or salsa
1 cup of tortilla chips, crushed
STEPS:
Preheat your oven to 350°F.
In a medium skillet, cook the ground beef until no longer pink. Drain the excess grease.
Add the taco seasoning and 1/2 cup of water. Simmer until most of the liquid has absorbed, then remove from heat.
Spread the softened cream cheese evenly over the bottom of a 2-quart casserole dish.
Add the seasoned beef on top of the cream cheese.
Sprinkle with 1 cup of the shredded cheese, then spoon the marinara or salsa on top.
Add the remaining cheese and finish with a layer of crushed tortilla chips.
Bake for about 20 minutes, until hot, bubbly, and beautifully melted.
