Korean Marinated Jammy Eggs (Mayak Gyeran)

If there is one thing my daughter absolutely loves in a bowl of ramen, it is the egg. Every single time we have ramen, she somehow manages to spot the egg first, and before I know it, I have given her mine too. 😂 At this point, I stopped pretending I was going to get my ramen egg back. So, naturally, I decided to make a whole batch of eggs just for her.


These Korean marinated eggs, also known as Mayak Gyeran, are soft, jammy eggs soaked in a sweet and savoury soy marinade with garlic, chili and sesame. They are incredibly easy to make and the longer they sit in the marinade, the more flavour they soak up.

What I love most about these eggs is that they are perfect to have waiting in the fridge. They make an easy addition to ramen, rice bowls, noodles or even a quick snack when you want something flavourful without making an entire meal. And for my daughter, they are basically the best part of ramen.




INGREDIENTS:


For the eggs

  • 6 large eggs

  • 1 tablespoon salt

  • 1 tablespoon white vinegar

  • Ice water, for cooling


For the marinade

  • 1/2 cup of soy sauce

  • 1/2 cup of water

  • 1/4 cup of honey

  • 3 cloves garlic, minced

  • 1 tablespoon toasted sesame seeds




  1. Start by preparing the marinade. In a bowl or container, combine the soy sauce, water, honey, minced garlic, chopped chili peppers and sesame seeds. Stir well until the honey is completely incorporated.

  2. Bring a pot of water to a boil and add the salt and vinegar. Gently lower the eggs into the boiling water and cook for about 6 minutes for soft, jammy yolks. If you prefer your eggs more cooked, simply let them boil a little longer.

  3. As soon as the eggs are done, transfer them directly into a bowl of ice water. Let them cool completely for about 5 to 10 minutes. This also helps make peeling them much easier.

  4. Once cooled, gently peel the eggs and place them into the marinade. Make sure the eggs are well coated and submerged as much as possible.

  5. Cover and refrigerate for at least 6 hours, but overnight is even better. This gives the eggs time to soak up all that delicious sweet and savoury flavour.

  6. When you’re ready to serve, slice one open and admire that beautiful jammy centre.

How to Serve Korean Marinated Eggs

These Mayak Gyeran are especially delicious with ramen. The soft yolk and savoury marinade are the perfect addition to a hot bowl of noodles.

You can also enjoy your Korean marinated eggs with:

  • Steamed rice

  • Rice bowls

  • Noodles

  • Fried rice

  • Bibimbap

  • Salads

  • Avocado toast

  • As a quick snack

A little drizzle of the leftover marinade over rice or noodles adds even more flavour.


A Little Tip

The eggs will continue to absorb flavour the longer they sit, so I love making them the night before I need them. Keep them refrigerated and enjoy them within a few days. And yes, I finally get to keep my own ramen egg.
