This simple, satisfying egg loaf is a dream for anyone following a low-carb, keto, or high-protein lifestyle — but it’s so delicious, you don’t need to be on a special diet to fall in love with it. Made with just a handful of ingredients, it bakes into a soft, custard-like loaf that feels indulgent but is packed with protein and healthy fats.

INGREDIENTS:
7 large eggs
1 (8 oz) block of cream cheese, softened
4 teaspoons of butter, softened
1 tablespoon of vanilla extract
1 tablespoon of low fat vanilla yogurt
1 teaspoon of cinnamon
STEPS:
Preheat your oven to 375°F. Grease the bottom of a glass baking dish.
In a large mixing bowl, combine the eggs, cream cheese, butter, and vanilla extract, yogurt and cinnamon. Using a hand mixer (or blender) blend until completely smooth and well incorporated.
Pour the mixture into the prepared dish and gently tap the pan on the counter to release any air bubbles.
Bake for 45 minutes, or until the center is set and the top is puffed and lightly golden.
The loaf will deflate slightly as it cools — that’s normal!
Slice into thick pieces.
Serve warm with your favorite toppings.
*Optional step: Toast each slice in a buttered skillet over medium heat until golden brown on both sides.
