Jack-O’-Lantern Stuffed Peppers

These Jack-O’-Lantern Stuffed Peppers are a fun and delicious way to bring a little Halloween spirit to the dinner table! Made with orange bell peppers carved into spooky faces and filled with Mexican rice, my award-winning chili, melted cheese, and seasoned ground pork, they make a hearty and festive family meal.

I made half of the peppers vegetarian for my sister and the other half with meat for my family, so everyone could enjoy their own version. I love making meals that can easily be customized to suit different tastes without having to prepare completely separate dishes.

The combination of Mexican rice, my award-winning chili, seasoned pork, and gooey melted cheese makes these stuffed peppers filling and flavourful. The bright orange peppers and little jack-o’-lantern faces make them extra special for Halloween, turning a simple dinner into something fun for the whole family.

Give my recipe a try and make your own spooky stuffed peppers this Halloween!

INGREDIENTS:

STEPS:

  1. Preheat your oven to 350°F.

  2. Wash the orange bell peppers and carefully cut off the tops. Remove the seeds and membranes from inside each pepper.

  3. Using a small, sharp knife, carefully carve jack-o’-lantern faces into the front of each pepper.

  4. In a frying pan, cook the ground pork until fully cooked, seasoning it with SPG seasoning. Drain any excess grease if needed.

  5. For the vegetarian filling, combine the prepared Mexican rice, vegetarian chili, and shredded cheese in a bowl.

  6. For the meat filling, combine the Mexican rice, award-winning chili, cooked ground pork, and shredded cheese.

  7. Stuff half of the peppers with the vegetarian filling and the remaining peppers with the meat filling.

  8. Sprinkle extra shredded cheese over the top of each stuffed pepper.

  9. Arrange the stuffed peppers on a baking sheet covered with a silicone mat and bake at 350°F for 20 minutes, until heated through and the cheese is melted. If your filling was prepared ahead and is cold, allow additional baking time to ensure it is heated thoroughly.

  10. Carefully remove from the oven and let cool slightly before serving.

  11. Bon appétit! Enjoy!
