Healthy Zucchini Lasagna Roll Ups (Air Fryer)

Craving lasagna roll ups but don’t want all the carbs? Zucchini slices rolled up around a delicious saucy meat and cheese filling, quickly baked in the air fryer makes for a healthier, low carb option that's not only delicious, but also very quick and easy to make.

So when I made this for dinner the other night, Alex said, “Oh, wow. This tastes way better than I thought.” At first, when he heard zucchini, he didn’t even want to give it a chance, but after the first bite he quickly devoured the rest and asked for seconds!

What’s not to like? You basically swap out the lasagna noodles for zucchini which makes this so much healthier! Once you try my delicious low carb Air Fryer Zucchini Lasagna Roll Ups recipe, you’ll be hooked. and you won’t even miss the lasagna noodles. I promise.

This tasty meal is a healthier, low carb lasagna option that’s not only delicious, but also very easy and quick to make. Also, you can make these ahead of time and even freeze them if needed! Give my recipe a try, it’s so easy & tasty!


  • 1 medium zucchini (thinly slice lengthwise- if you don’t have a mandolin, use a peeler)

  • 1/2 cup of seasoned cooked ground beef (I used taco seasoning)

  • 1/2 cup of pasta sauce (divided) *I use marinara

  • 1/4 cup of mozzarella cheese

  • 1/4 cup of cottage cheese (I use non fat)

  • Salt & pepper to taste


  1. Preheat your air fryer: 350F, 12 minutes.

  2. Mix your meat with half of your pasta sauce and save the rest for later.

  3. Add the mozzarella and cottage cheese to your meat mixture. Season with salt & pepper.

  4. Lay two zucchini slices side by side slightly overlapping and place a large spoonful of filling on one end. Roll the zucchini with the filling.

  5. Place the rolls in lined air fryer baskets.

  6. Air-fry at 350F for 12 minutes.

  7. Add the rest of pasta sauce to a plate and lay the rolls on top of the sauce.

  8. Bon appétit!
