Healthy and Deliciously Creamy, Broccoli Soup

Try my tasty, healthy, creamy Broccoli Soup! It’s texture is so smooth and velvety despite having no cream! This delicious soup makes a great starter to any meal.  It’s also gluten-free and dairy free! This creamy broccoli soup is so easy to make and ready to enjoy in less than half an hour.


With cold season right around the corner, this soup can provide you and your loved ones with a nutritious dish to help strengthen your body. After all, brocoli is considered to be one of the superfoods!


This soup is pureed into such a creamy, smoothe texture, that it's hard to believe it contains no cream!


My son loves to top up his bowl with grated mozzarella and parmesan cheeses! I top mine off with cut up tomatoes, my husband prefers his topped with croutons. 

This soup stores well in the fridge for about a week. Just make sure it’s in a sealed container. Also, because it does not contain any dairy, it freezes very well, and keeps for up to a month.

INGREDIENTS:


  • 1 full head of fresh Broccoli 

  • 1 large onion, chopped 

  • 2 garlic cloves, sliced 

  • 3 tablespoons of extra virgin olive oil 

  • 4 cups of low-sodium broth of your choice 

  • 1/2 teaspoon dried marjoram 

  • 2 tablespoons of fresh basil, chopped 

  • 1 cup of water 

  • salt & pepper to taste 

  • Optional toppings:  chopped tomato, shredded cheeses of your choice, croutons, anything you’d like!




STEPS:


  1. Wash the brocoli well. Cut off the tops into small florets. Rinse and wash the broccoli again 

  2. In a large pot, boil 1 cup of water and add the broccoli, cover, and steam for 5 minutes.

  3. In a large pan, cook the onion and garlic in the olive oil over medium-low heat, for 5 minutes, until the onion is softened. Add the broth & basil and simmer for another 5 minutes.

  4. Add the onion, garlic, basil and broth mixture to the large pot of steamed broccoli. Add the marjoram. Heat the soup mixture at a simmer for about 5 minutes. 

  5. Taste the soup, and season with salt and pepper to your taste.

  6.  Use a handheld immersion blender directly into the pot, and simply puree into a creamy texture and voilà!

  7. Bon appétit! 

  8. Optional: garnish with a spoonful of chopped tomato. You may serve it with some grated Parmesan cheese at the table.
