Gluten-Free Rice Paper Noodles

If you’re like me and love the texture of rice paper, you will love this recipe for rice paper noodles!


These rice paper noddles are gluten-free and so tasty, chewy, and just perfect for soaking up all the flavours.


I came up with this recipe when I was looking for a gluten free option for me mom who was craving noodles, but didn’t want to feel bloated and full of regret after enjoying her meal. I always have rice paper in my pantry as my daughter can’t get enough of them. My go to is rice paper rolls, but I really wanted my mom to have her noodles, and now it’s become one of my favourite noodle dishes!


I started playing around with different noodle thicknesses and discovered they too thin isn’t great but too thick isn’t either. So I feel that 5 rice papers stacked on top of each other is just right.






INGREDIENTS:


  • 10 rice papers

  • warm water for your large bowl

  • 1 teaspoon of olive oil for greasing the cutting board

  • 1 teaspoon of olive oil for cooking the garlic

  • 2 cloves of garlic minced

  • 1 tablespoon of soy sauce

  • 1/2 teaspoon of sugar

  • 1 onion, chopped (and/or other vegetables)

  • A handful of shredded lettuce

  • 1 teaspoon of sesame oil





STEPS:


  1. Start by adding warm water in a large bowl and lightly grease a cutting board with a little oil.

  2. Next, take 5 pieces of dry rice paper and stack them on top of each other. Soak them in the warm water for a few seconds until they’re soft.

  3. Place the rice paper stack onto the greased cutting board. Use your fingers to get rid of all the air bubbles. The rice papers should be sticking together at this point.

  4. Take a sharp knife and cut your noodles! Cut them into around 1-inch wide noodles. Place the noodles into a bowl with some cold water to prevent them from sticking to each others.

  5. At this point the noodles are ready to enjoy with seasoning & sauces of your choice. I like to cook mine with a sauce for a few minutes.

  6. Here’s how to make a this dish very tasty, this is the way I love it: heat some oil on a non-stick pan on medium-high heat and saute minced garlic for 1 minute, add soy sauce, sugar, rice paper noodles, and onions & lettuce (or other vegetables), and 2 tablespoons of water. Cook while stirring constantly for 2 minutes. This should give the noodles enough time to absorb all the tasty flavours.
