Easy Fufu & Egusi with Spinach

There are some recipes that make their way into your kitchen because you’ve been making them for years, and then there are the ones your kids discover online and suddenly become the thing they want you to make. This fufu and egusi recipe is definitely the latter!


Isabella discovered fufu and egusi while it was trending all over social media, and it quickly became one of her favourites. I love when my kids introduce me to foods and flavours I might not have thought to try myself, especially when they end up becoming something we make together at home.


This version is simple, comforting and packed with flavour. The rich tomato and egusi sauce comes together easily with fresh tomatoes, onion, tomato sauce, tomato paste and plenty of spinach. Serve it with soft, pillowy fufu for a fun and delicious meal that’s perfect for scooping up all that savoury sauce.





INGREDIENTS:


  • 2 large tomatoes

  • 1 small onion

  • 18 oz of tomato sauce

  • 3 tablespoons of tomato paste

  • 1 & 1/2 cups of water

  • 1/2 cup of ground egusi

  • 1 lb of fresh spinach

  • Fufu, for serving




STEPS:


  1. Blend the tomatoes and onion: Add the tomatoes and onion to a blender and blend until smooth.

  2. Cook the tomato mixture: Pour the blended tomato and onion mixture into a large pot and cook over medium heat.

  3. Add the tomato sauce: After about 10 minutes, stir in the tomato sauce, tomato paste and 1½ cups of water.

  4. Simmer: Stir everything together and let the sauce simmer for another 10 minutes, allowing the flavours to come together.

  5. Add the egusi: Stir in the ½ cup of ground egusi and mix well. Continue cooking until the sauce thickens and the egusi is cooked through.

  6. Add the spinach: Stir in the fresh spinach and cook until wilted and incorporated into the sauce.

  7. Serve: Spoon the egusi and spinach stew into bowls and serve with warm fufu. Break off a small piece of fufu, use it to scoop up the stew, and enjoy! Bon appétit!
