*I like to eat mine with a simple garlic mayonnaise aioli - I mix 1 cup of light mayonnaise, with 1 teaspoon of hot mustard, I add 3 crushed garlic cloves, and 2 teaspoons of freshly squeezed lemon juice.
1 lb of potatoes, cut into bite size pieces, about 1/2” thick, skin-on, scrubbed clean (I like to use Yukon gold potatoes)
1 tablespoon of extra virgin olive oil
1/2 teaspoon of salt
1/2 teaspoon of garlic powder
1/3 teaspoon of freshly ground pepper
Cut potatoes into bite-sized pieces, about 1/2” to 3/4” thick and place in a medium mixing bowl. Drizzle with olive oil and sprinkle on the seasonings. Toss to combine and coat in oil and seasonings.
Transfer the potatoes to your Air Fryer basket in a single layer and Air fry at 392˚F or 200˚C for 18 minutes, flipping and tossing halfway.
Potatoes will be golden brown, crispy on the outside and tender on the inside.
