Deliciously Healthy Lentil Soup

Packed full of lentils & engulfed in a deliciously spiced tomato sauce, this Lentil Soup is not only super tasty but it's also a healthy meal that can be made easily and enjoyed by all!


I've been trying to add more legumes to my diet, so I've been reading up on lentils a lot. If you’re wondering if lentil soup is good for you, the answer is yes! Lentils are very nutritious; they're rich in minerals and protein, high in fibre and low in fat. You may be thinking, but Houri, lentils are a carb, yes you are correct, but they're slow burning which means they keep you full longer.


I highly recommend enjoying this delicious soup with some sort of warm crusty bread for dunking! Don't settle for a bland lentil soup. Try my recipe, and you'll have everyone begging for seconds. I just had my third bowl!




INGREDIENTS:


  • 2 tablespoons of olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 large carrot, grated

  • 1 can of lentils (2 & 1/3 cups/540g/19oz)

  • 400g/14oz crushed tomatoes

  • 900ml-1litre/6 cups of your choice of broth- I highly recommend Campbells beef broth with red wine, it's delicious)

  • 1/2 tablespoon of paprika

  • 3 bay leaves

  • salt and pepper to taste

  • Optional: 1 lemon (zest + juice)



STEPS:


  1. Heat the oil in a large pot over medium heat. Add the garlic and onion, cook for 2 minutes.

  2. Add the carrot and cook for 2 minutes.

  3. Add all remaining ingredients except the lemon and stir. 

  4. Increase the heat to boil and then reduce thr heat to a simmer. *I always scoop the foam on the surface of the soup and throw it out.

  5. Place the lid on the pot and simmer on medium low heat for 20 minutes.

  6. Bon appétit!
