Cucumber Radish Salad

I love making (and eating!) this super refreshing salad. The light taste combined with the crunchy cucumbers and radishes make it a flavorful and delicious dish. I like cutting my veggies as thinly as possible for this salad. I use a peeler and it works great! You can use a mandoline slicer or you can do it by hand if you want.

INGREDIENTS:


  • 1/2 an English cucumber, thinly sliced

  • 5 large radishes, thinly sliced

  • 1 tablespoon of red wine vinegar

  • 1 tablespoon of olive oil

  • 1 teaspoon of finely chopped fresh dill

  • 1/2 teaspoon of white sugar

  • Salt & pepper to taste



STEPS:


  1. Place the radishes and cucumbers into a medium sized bowl.

  2. Add the olive oil, vinegar, sugar, dill, salt & pepper.

  3. Mix well. Refrigerate until chilled, it tastes better when it’s cold.

  4. Bon appétit!
