Crispy Havarti Phyllo Honey Bites


There’s something magical about recipes that look fancy but take almost no effort at all. These little phyllo bites fall exactly into that category — golden, crispy spirals of buttery pastry wrapped around soft, melty Havarti, finished with the simplest drizzle of honey. They’re the kind of thing you can make when you want to bring something special to the table without stressing, whether it’s a holiday gathering, a cozy night in, or just because you deserve a little treat.


What I love most about these is how they feel: warm, comforting, and just a bit luxurious. They remind me that the best food doesn’t have to be complicated. A few good ingredients, a hot oven, and a drizzle of honey can turn something simple into something memorable. Also, this recipe works well with most cheeses, I made some with Brie and it was just as delicious. And trust me, once you make these, you’ll keep finding excuses to bake them again! The crunch of the phyllo is simply magical! Give my recipe a try, you won’t be disappointed.



INGREDIENTS:


  • 3 sheets of phyllo

  • 3 cups of Havarti cheese, shredded fresh (you can use other cheeses too)

  • 6 tablespoons of butter, divided

  • Optional: Honey for the topping (I used 1 teaspoon per bite), you can also top with fresh or dry herbs of your choice


STEPS:


  1. Preheat your oven to 400°F.

  2. Brush 2–3 tablespoons of melted butter between each of the phyllo sheets, as well as the top one, layering them as you go.

  3. Sprinkle the freshly grated Havarti evenly across the top sheet, then roll it up very tightly lengthwise. (If you need a visual, check my video!)

  4. Using a sharp knife, slice the roll into 12 rounds.

  5. Add a few drops of melted butter in each of the 12 cups of a muffin tin.

  6. Place one phyllo round into each muffin cup.

  7. Top each bite with a few drops of melted butter. Bake for 20 minutes, until golden.

  8. Remove from the oven and drizzle honey over them while they’re still hot, letting it soak into all the crispy layers.
