Creamy Radish Cucumber Salad

The weather is finally getting nicer, and that always make me crave refreshing salads! This creamy Radish Cucumber Salad is a hit in our house and I think you’ll love it too. It’s packed with delicious flavours, it has a crisp crunchy texture and it’s super creamy. This is one of my all-time favorite radish salads and I can’t wait for you to make it on repeat this summer and think of me! ;)


My husband always says that this creamy Radish Cucumber Salad takes him back to his childhood. His family is from Ukraine, and radishes are very popular ingredient in many of their dishes.


This salad is honestly super easy to make and if so tasty. The best part? Radishes are super nutritious! They’re so good for the liver, packed with Vitamin C, Folic Acid and Potassium.

INGREDIENTS:


  • 2 Persian cucumbers, thinly sliced

  • About 20 radishes, trimmed and thinly sliced

  • 1 bunch of green onions/scallions (1/2 cup chopped)

  • 3/4 cup of mayonnaise (you can substitute for sour cream, or plain Greek yogourt)

  • Salt and pepper to taste



STEPS:


  1. In a medium bowl, combine sliced cucumbers, sliced radishes and chopped green onion.

  2. When you’re ready to serve/eat the sale, add the mayonnaise and salt & pepper. Stir well to coat the salad in the creamy dressing.

  3. Voilà! Bon appétit! Enjoy it just as it is, or on top of lettuce, or inside of a romaine lettuce leaf!
