Chocolate Raspberry Dates

There are certain foods that instantly take me back home, and for me, dates are one of them. Growing up in a Persian family, dates weren’t just a snack, they were part of our everyday rhythm. They were always on the table, offered with tea, shared with guests, and brought out during special moments without any need for occasion. Big, soft, caramel-like dates felt like such a treat, and even now, that deep, rich sweetness carries so much nostalgia for me.


This recipe is one of those simple little creations that feels both indulgent and meaningful. It takes something so traditional and gives it a bit of a modern twist. The combination of creamy pistachio, tart raspberry, and rich chocolate wrapped around a soft date is honestly magic. It’s the kind of bite that looks fancy but takes almost no effort, which is exactly my kind of recipe.

INGREDIENTS:


  • Large Medjool dates

  • Pistachio spread

  • Fresh raspberries

  • Chocolate chips or any chocolate (for melting)

  • Flaky sea salt, Skor bits or crushed pistachios or any topping you love




STEPS:


  1. Start by gently slicing each date lengthwise and removing the pit. Open it up and lightly press the inside so it creates a little bowl shape without tearing the outer skin.

  2. Spread a layer of pistachio spread inside each half of the date. Place a fresh raspberry in the center, then gently press the date back together, sealing it as best as you can.

  3. Melt your chocolate in the microwave in 30 second intervals, stirring in between until smooth and fully melted.

  4. Dip each stuffed date into the melted chocolate, making sure it is well coated, then place it on a parchment/silicone lined tray.

  5. While the chocolate is still warm, sprinkle with flaky sea salt and your choice of toppings like Skor bits or crushed pistachios.

  6. Let them set at room temperature or place them in the fridge until the chocolate hardens.
