Air Fryer Rice Paper Pizza Pinwheels

I’m always playing around with gluten free recipes, especially for my mom. If I can make something that feels a little indulgent, a little nostalgic, and still light enough for her to enjoy, that’s a win in my books. These pizza pinwheels check all the boxes and they’re surprisingly simple.
Using rice paper in the air fryer gives you that golden, crispy bite without feeling heavy. I soften the rice paper, dip it generously in egg wash, then layer three sheets for each roll so they hold together beautifully. Fill them with whatever you love. I went with marinara sauce, shredded cheese, a little goat cheese, and a sprinkle of oregano. Before assembling, I rub a bit of olive oil on my work surface to keep everything smooth and easy to roll.
They come out crisp on the outside, warm and cheesy on the inside, and completely gluten free. Give my recipe a try and see how easy gluten free comfort food can be!
INGREDIENTS:
Rice paper sheets
Eggs, whisked for egg wash
Marinara sauce
Shredded cheese
Goat cheese
Dried oregano
Olive oil
SREPS:
Start by lightly rubbing olive oil onto your work surface. This makes handling the rice paper much easier and prevents sticking.
Whisk your eggs in a shallow bowl. Dip each rice paper sheet generously into the egg wash, making sure it’s well coated but still pliable.
For each pizza roll, layer three egg washed rice paper sheets on top of one another on your oiled surface.
Spoon a small amount of marinara sauce into the center, then add shredded cheese, a few crumbles of goat cheese, and a sprinkle of oregano. Be careful not to overfill.
Fold the sides in and roll tightly, like a spring roll, sealing everything inside. Roll into pinwheels.
Preheat your air fryer to 380°F. Lightly oil the air fryer basket liner.
Place the pinwheels in the basket (spacing them) and air fry for 14 minutes, flipping halfway, until golden, crispy, and bubbling on the inside.
Let them cool slightly before serving. They crisp up even more as they sit.
