The easiest little treat to welcome fall! These soft, chewy pumpkin bites are naturally sweetened, full of cozy pumpkin spice flavor, and perfect with a cup of coffee or tea. The best part? They’re made with just a few wholesome ingredients and come together in under 30 minutes.
If fall had a flavor, it would taste exactly like these pumpkin bites. Sweet, spiced, and perfectly soft, they’re like little bites of pumpkin pie without all the fuss of rolling dough or pulling out a pie dish. I love how they’re just the right size — poppable, snackable, and so easy to share (though trust me, you’ll want to keep a stash for yourself!).
What makes these extra special is how simple they are. Just a handful of wholesome ingredients you probably already have in your pantry: almond flour for that tender, nutty base, real pumpkin purée for that cozy fall flavor, maple syrup for natural sweetness, and of course, a sprinkle of pumpkin spice to make the whole kitchen smell like autumn. They’re naturally gluten-free and can easily be made refined sugar-free if you skip the coating — so you can feel good about reaching for seconds (or thirds).

INGREDIENTS:
For the bites:
1 cup of almond flour (regular flour is fine if you don’t want gluten-free)
3 tablespoons of pumpkin purée
3 tablespoons of maple syrup
1 teaspoon of pumpkin spice (optional but highly recommended!)
For the optional pumpkin spice coating:
1/2 cups of sugar
1–2 teaspoons of pumpkin spice
2 tablespoons of maple syrup
STEPS:
Preheat oven to 350°F. Lightly grease a muffin pan with cooking spray, or use a baking sheet.
Combine your flour, pumpkin purée, maple syrup, and pumpkin spice in a mixing bowl. Stir until a sticky, firm dough forms.
Roll into small balls and place them in the prepared muffin pan or on the baking sheet.
Bake for 14 minutes, until the edges are golden and the tops are set.
Let cool in the pan for 10 minutes,
Enjoy them plain, or make them extra special:
In a small bowl, mix sugar and pumpkin spice.
Lightly brush each bite with maple syrup, then roll in the pumpkin spice sugar until coated.
