Nargesi is a Persian spinach and egg dish that is quite simple, yet so full of flavour. In this dish, the spinach is combined with an entire bulb of garlic to achieve an extremely flavourful experience for the palette! There aren’t too many vegetarian Persian dishes, this is one of few, and it is one of the best!
4 tablespoons of extra virgin olive oil
1 entire garlic bulb, minced (10 cloves)
6 cups of baby spinach, roughly chopped
2 to 4 eggs
1/2 tablespoon of turmeric
1/2 teaspoon of salt (more if needed)
Heat the oil in a large pan over medium heat.
Once the oil in heated, sauté the garlic briefly, with the turmeric (3 minutes).
Add the chopped spinach. Stir and mix it until it starts to wilt (7 minutes).
Add the eggs into the pan, one by one but don't stir yet.
Sprinkle the salt on the spinach and eggs, mix it all and cook it for about 5 more minutes, until the eggs seem fully cooked.
Serve warm with saffron basmati rice. Some prefer eating. It with fresh bread.
