Crispy Cheesy Potatoes

Who doesn’t like potatoes? In our family, we love them– from baked potatoes, to mashed potatoes to french fries, there are so many delicious ways to enjoy potatoes, but this recipe I’m sharing with you is quickly becoming one of my favorites yet!


My super tasty Crispy Cheesy Potatoes are a simply delicious, crispy, and one of my favourite ways to enjoy potatoes. You can whip these together so quickly, from prep to eating in less than an hour! You need very few ingredients


This is the perfect side dish to go with your favorite recipes for lunch or dinner, or even breakfast! I like to eat them any time of the day, as a snack. I just made these again tonight and they were such a hit that I knew I had to post a recipe on my site. These crispy parmesan potatoes are perfect for those of us who love extra crispy edges on everything – I love the burnt top layer of roasted marshmallows, burnt ends of ribs and that crispy cheese that leaks out of nacho platters! (I may or may not be the one who eats all the bark off the pulled pork right after it comes out of the smoker…👀 *Bark is that dark, tasty crust that forms on the outside of smoked meat.)


Give these Crispy Cheesy Potatoes a try, it will quickly become your new go-to recipe!





INGREDIENTS:


  • 1 lb of little yellow potatoes, cut in half

  • 1 teaspoon of garlic powder

  • 1 teaspoon Italian seasoning

  • 1/4 cup of butter, melted

  • 1 teaspoon of olive oil

  • 1/3 cup of Parmesan cheese + an extra 1/4 cup of Parmesan cheese to top the potatoes with

  • Salt to taste





STEPS:



  1. Preheat your oven to 425 F (I’ve tried at 450 F if I’m in a rush, bake time was reduced by 10 minutes, however, you run the risk of burning your potatoes, so stick to 450 F!)

  2. Wash little mini potatoes, and cut them in half. Then, set them aside.

  3. Grab a large baking dish and add in your melted butter, garlic powder, Italian seasoning, and 1/3 cup of parmesan cheese. Mix them together until you get a thick paste.

  4. Add your potatoes to the baking dish and mix well until the potatoes are fully covered in the paste. 

  5. Sprinkle the rest of your parmesan cheese on top of the potatoes.

  6. Finally, bake your potatoes for 35-45 minutes, depending on how crispy and golden you like your potatoes.

  7. Once they’re done, add some salt and enjoy!
